Try the Tea-Smoked Duck, which is finished in a clay oven, or, for something more traditional, the Tandoori Chicken. The buzz about Mars would not be complete, however, without a mention of the Rice Paper Fish—the catch of the day cooked in rice paper with whatever combination of herbs, spices and vegetables that strikes the mood of the chef.
